These are the things I’ve been baking.

I’ve been on a big scone kick lately. One of the things that is nice about them is that they are very adaptable. There are a lot of variations you can do. For this one I took a plain scone recipe and added in some orange zest (1 orange worth), some orange juice (about 2 tablespoons), and a bunch of dark chocolate chips. Oh, and I did a glaze consisting of more orange juice mixed with powdered sugar. I think this might be my best batch yet. They are absolutely delicious.

Started with this basic scone recipe. I added a handfull of sliced almonds and a few drops of almond extract. They came out quite nicely.
- April 16, 2026 Bagels

I’ve been wanting to make bagels for a while. I finally got around to tracking down the special ingredients required i.e. barley malt syrup. This was a nice simple recipe for my first attempt, and they came out well. They were nice and chewy. There is plenty of room for improvement. In particular, the ost common feature of the other recipes I have looked at is a longer period of fermentation to develop more flavor. I am looking forward to experimenting more.
- April 13, 2026 Pretzel Focaccia

I had a craving for pretzels and this looked like a fun variation. It definitely delivers on what it promises, but I still found it underwhelming. It feels like a gimmick ultimately. I don’t expect to make this again; I would just as soon have a regular pretzel.
It did make for a decent sandwhich though.
